Dungeons and Dragons Players, Can You Help?

The low intelligence doesn't have to represent sheer stupidity. The basic definition of the attribute says it is the ability to learn and reason. Defenders of the faith are often indoctrinated into a mindset and way of life devoted to their faith. You could well be unwilling to let the taint of weak-minded mortals affect your established ways laid out in sacred writings. You zeal could burn brighter than any thought in your mind, shutting out all but the drive to serve your faith and god. Maybe you're simply easily distracted or have a short attention span for mere worldly affairs. You may see yourself as above such piffle, let the flock tend to the daily needs, you are the protector of the flock, not a mere sheep. Your role could be established and well-defined, staying strongly in the Paladin role at the expense of reason. I would say play it over-paladin, whenever you could do something clever or insightful, do something regimented and according to your faith. Use your faith as your guide to reason, replace smarts with scriptures. Clear it up with the DM too, tell them to cut you some slack, but be open to the occasional joke at the paladin's expense. Just play along in good fun and use your next opportunity to ert your reason behind the paladin's lack of reason.
